Sunflower Granola Bars

  1. 2 cups crisp rice cereal
  2. 2 cups old-fashioned rolled oats
  3. 1/2 cup raisins
  4. 1/2 cup shelled roasted salted sunflower seeds
  5. 1/2 cup roasted salted pepitas (green pumpkin seeds)
  6. 1/2 cup roasted salted soy nuts
  7. 1/2 cup packed brown sugar1 cup light corn syrup
  8. 1/2 cup sunflower butter
  9. 1 teaspoon vanilla

Preparation

  1. Spray a 13" x 9" pan with non-stick cooking spray.
  2. In a large bowl, stir together the cereal, oats, raisins, sunflower seeds, pepitas and soy nuts.
  3. In a medium saucepan, combine the brown sugar, corn syrup and sunflower butter.
  4. Cook the mixture over medium heat for 3 to 5 minutes or until bubbly.
  5. Remove from heat; stir in the vanilla. Pour over cereal mixture; stir to combine.
  6. Press into pan; cool completely, then cut into bars.
