Sundried Tomato Pesto

Ingredients

  1. 3 Bunches fresh basil
  2. 2 Shallots, chopped
  3. Big handful Asiago cheese
  4. 10 garlic cloves
  5. kosher salt
  6. cracked pepper
  7. 2 Cups sundried tomatoes (not packed in oil)
  8. 1 cup of olive oil

Preparation

  1. Combine first 6 ingredients in food processor
  2. Add olive oil
  3. Feed tomatoes into food processor until thick paste forms

serve with pasta, on crostini or as a dip for crudites.
