Sundried Tomato Pesto

Ingredients
- 3 Bunches fresh basil
- 2 Shallots, chopped
- Big handful Asiago cheese
- 10 garlic cloves
- kosher salt
- cracked pepper
- 2 Cups sundried tomatoes (not packed in oil)
- 1 cup of olive oil
Preparation
- Combine first 6 ingredients in food processor
- Add olive oil
- Feed tomatoes into food processor until thick paste forms
serve with pasta, on crostini or as a dip for crudites.
