Quinoa and Black Bean Salad with Ginger Lime Dressing

Ingredients
- 1 cup (250 mL) quinoa
- 2 cups (500 mL) water
- 1 cup (250 mL)canned black beans, drained and rinsed
- 2 tbsp (25 mL) vegetable oil
- 1 tbsp (15 mL) honey
- 1/4 cup (50 mL) freshly squeezed lime juice
- 1 tbsp (15 mL) finely minced ginger
- 1 tsp (5 mL) minced garlic
- salt and pepper, to taste
- 1 red pepper, diced
- 1 large carrot, peeled and diced
- 2 green onions, finely chopped
Preparation
- In medium saucepan, bring water to a boil over high heat; stir in quinoa.
- Reduce heat to low; cover and simmer 12 min or until quinoa is tender.
- Drain any excess liquid; add to large mixing bowl with black beans and bring to room temperature or refrigerate until ready to assemble.
- In small bowl, whisk together vegetable oil, honey, lime juice, ginger, garlic, salt and pepper
- Pour mixture over quinoa; add red pepper, carrot and green onion; toss and let stand 10 minutes
adjust seasoning and serve.
