Quinoa and Black Bean Salad with Ginger Lime Dressing

Ingredients

  1. 1 cup (250 mL) quinoa
  2. 2 cups  (500 mL) water
  3. 1 cup (250 mL)canned black beans, drained and rinsed
  4. 2 tbsp (25 mL) vegetable oil
  5. 1 tbsp (15 mL) honey
  6. 1/4 cup  (50 mL) freshly squeezed lime juice
  7. 1 tbsp (15 mL) finely minced ginger
  8. 1 tsp (5 mL) minced garlic
  9. salt and pepper, to taste
  10. 1 red pepper, diced
  11. 1 large carrot, peeled and diced
  12. 2 green onions, finely chopped

 

Preparation

  1. In medium saucepan, bring water to a boil over high heat; stir in quinoa.
  2. Reduce heat to low; cover and simmer 12 min or until quinoa is tender.
  3. Drain any excess liquid; add to large mixing bowl with black beans and bring to room temperature or refrigerate until ready to assemble.
  4. In small bowl, whisk together vegetable oil, honey, lime juice, ginger, garlic, salt and pepper
  5. Pour mixture over quinoa; add red pepper, carrot and green onion; toss and let stand 10 minutes
    adjust seasoning and serve.
