the Perfect Turkey Stuffing
From Chateau Laurier

Ingredients
- ½ loaf white bread diced
- ½ loaf whole wheat bread diced
- 2 Cortland apples diced
- 1 large onion diced
- 2 celery stalks diced
- 2 tbs poultry seasoning
- 1/3 cup copped fresh sage and fresh thyme
- ½ cup chopped pistachios
- 1 cup diced bacon
- ½ cup melted butter
- 1 cup chicken stock
- Salt and pepper to taste
- 2 eggs beaten (optional)
Preparation
- In a heavy bottomed frying pan cook the bacon over medium heat until golden brown.
- Add the apples, celery, and onions and continue to sauté for an additional 5 minutes.
- Add the poultry seasoning, sage, thyme, and pistachios to the pan, stir and sauté for 1 minute.
- In a large mixing bowl toss the bread, eggs, stock, butter and sautéed items.
- Season with salt and pepper to taste.
- Cool the stuffing mixture and then stuff the turkey.
