Vegan Muffins

Ingredients
- 2 cups rice flour
- 1 cup organic unbleached cane sugar
- 2/3 cup potato starch
- 1/3 cup tapioca flour
- 1 tsp xanthan gum
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 cup applesauce
- 1/2 cup earth balance margerine
- 3 organic bananas, well mashed
- 2/3 cup non dairy chocolate chips
Preparation
- Combine all dry ingredients in a bowl
- Add earth balance to dry mix and using two butterknives, cut it into the mixture until it resembles coarse crumbs
- Mash bananas, mix in applesauce and add to dry mix, stirring well
- Gently stir in chocolate chips
- Scoop into lined muffin tins and bake for 25 mins at 350 degrees.
