Vegan Muffins

Ingredients

  1. 2 cups rice flour
  2. 1 cup organic unbleached cane sugar
  3. 2/3 cup potato starch
  4. 1/3 cup tapioca flour
  5. 1 tsp xanthan gum
  6. 1 tsp baking soda
  7. 1 tsp baking powder
  8. 3/4 cup applesauce
  9. 1/2 cup earth balance margerine
  10. 3 organic bananas, well mashed
  11. 2/3 cup non dairy chocolate chips

Preparation

  1. Combine all dry ingredients in a bowl
  2. Add earth balance to dry mix and using two butterknives, cut it into the mixture until it resembles coarse crumbs
  3. Mash bananas, mix in applesauce and add to dry mix, stirring well
  4. Gently stir in chocolate chips
  5. Scoop into lined muffin tins and bake for 25 mins at 350 degrees.
