Ruthless Mini Beef Tacos

Ruthless Hot Sauce

  1. 1 sack scoop corn tortilla chips, any brand or color (yellow, blue, red, white) will do
  2. 3 tablespoons extra virgin olive oil, divided
  3. 1 1/2 pounds ground beef
  4. 2 medium onions, chopped
  5. 2 firm Halves avocados
  6. 3 plum tomatoes, seeded and chopped
  7. Ruthless Hot Sauce
  8. Handful cilantro leaves, chopped
  9. 2 sacks, 10 ounces, 2 cups each shredded Monterey Jack or sharp Cheddar cheese

Preparation

  1. Heat a large nonstick skillet over medium high heat. Add olive oil – 2 turns of the pan.
  2. Add the beef to the skillet, brown and crumble it, 5 minutes.
  3. To the browned meat, add the chopped onions.
  4. Season the meat with Ruthless hot sauce (quarter of the bottle). Cook together 5 minutes more, Adjust Ruthless Hot Sauce, to taste.
  5. Halve and separate the avocados. Remove pit with a spoon. With the skin in tact, using a small knife, dice the avocado while still in the skin. Scoop out the diced flesh and place in a bowl.
  6. Combine tomatoes, and cilantro gently with avocado.
  7. Take your scoop tortillas chips and add the beef half way up and then layer the top with the tomatoes, cilantro and avocado.
  8. Finish it off by sprinkling cheese on top.
