Summer Garden Gazpacho (Low Sodium)

Ingredients
- 6 ripe tomatoes, cut into chunks
- 1/2 large cucumber, peeled, halved seeded, diced
- 1 large red pepper diced
- 1 chilli pepper diced
- 2 garlic cloves, smashed
- 1 cup water
- 1/3 cup extra-virgin olive oil
- 2 tablespoons lemon juice and zest
- 1 bunch of basil
- 1 bunch of cilantro
- 1 tsp of paprika
Preparation
- Pulse all the ingredients but the cucumber and peppers in a food processor until you have the desired texture.
- Stir in diced cucumber and peppers.
- Chill before serving
- Drizzle with olive oil
