Summer Garden Gazpacho (Low Sodium)

Ingredients

  1. 6 ripe tomatoes, cut into chunks
  2. 1/2 large cucumber, peeled, halved seeded, diced
  3. 1 large red pepper diced
  4. 1 chilli pepper diced
  5. 2 garlic cloves, smashed
  6. 1 cup water
  7. 1/3 cup extra-virgin olive oil
  8. 2 tablespoons lemon juice and zest
  9. 1 bunch of basil
  10. 1 bunch of cilantro
  11. 1 tsp of paprika

Preparation

  1. Pulse all the ingredients but the cucumber and peppers in a food processor until you have the desired texture.
  2. Stir in diced cucumber and peppers.
  3. Chill before serving
  4. Drizzle with olive oil
